Fofi's Fabulous Fish Soup

Ingredients:

  7                     carrots -- thinly sliced
  6               ribs  celery -- thinly sliced
  3                     potatoes -- in 1/2" cubes
  2                     onions -- coarsely chopped
  16            ounces  stewed tomatoes
     3/4      teaspoon  freshly ground pepper
     1/2           cup  olive oil
  1 1/2         pounds  cod or haddock fillets -- in bite size pieces
 

Preparation:

1. In a large kettle combine all ingredients except fish. 2. Add 2 1/2 quarts water, bring to a boil. 3. Reduce heat and simmer the mixture for 20-25 minutes or until vegetables are tender. 4. Add the fish, and cook at a bare simmer for 20 minutes. 5. Season to taste.
