29 ounces pumpkin, solid pack
14 1/2 ounces chicken broth
1/2 cup water
1/4 can brown sugar, packed
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1/8 teaspoon pepper
2 cups half and half |
Preparation:
In a large saucepan, combine all the ingredients except the half and half; mix well. Bring to a boil over medium heat, stirring frequently. Reduce the heat to low and stir in the half and half until well blended. Cover and simmer until heated through. Serve immediately.
Note: Make this extra festive by swirling a dollop os sour cream into each bowl before serving. For a really spectacular presentation, serve the soup in hollowed-out individual small pumpkins or acorn squash. |
