Chicken Pumpkin Soup

Ingredients:

  2               cups  pumpkin
  2             medium  onions
  1                 T.  unsalted butter
  3               cups  defatted chicken broth
  1               Dash  nutmeg or allspice
                        Freshly ground pepper   to taste
  1                cup  plain yogurt
                        Chopped chives  for garnish
 

Preparation:

Steam pumpkin till tender, about 15 - 20 minutes, and set aside. In saucepan, saute onions in butter over medium heat until translucent. Add pumpkin and cook for 5 minutes. Add chicken broth, nutmeg or allspice and pepper. Cook 10 -15 minutes. Remove from heat and put in food processor fitted with steel blade or in blender. Puree till smooth. Put back on low heat and bring to boil. Remove from heat. Serve with yogurt and chives.
