Butternut Squash Soup

Ingredients:

   1      Large         Butternut Squash
   4      Cups          Chicken Broth
   1      Large         Apple -- peeled and chopped
   1      Large         Onion -- chopped
     1/4  Cup           Peanut Butter
   1      Teaspoon      Curry Powder
                        Salt And Pepper
     1/2  Cup           Cream
                        Nutmeg
 

Preparation:

Cut squash in 2 inch pieces and boil with broth and apple. Brown onion in butter and put in with broth. Cook 20 minutes. Stir in peanut butter, curry and salt and pepper. Puree 2 cups of soup at a time in blender. Pour in cream and heat. DO NOT BOIL. Serve with nutmeg.
