Preparation:
1. In medium saucepan, stir together blueberries, water, sugar, lemon juice and cinnamon stick; bring to a boil.
2. Reduce heat and simmer, uncovered, 15 minutes.
3. In bowl, stir cornstarch and water until smooth; add to blueberry mixture, stirring constantly, and bring to a boil.
4. Boil 1 minute; remove cinnamon stick and refrigerate.
5. Serve garnished with whipped cream.
Strawberry Soup ("Variation) Makes about 3 cups
1. Follow basic recipe, but substitute 2 cups sliced fresh or frozen strawberries and reduce cinnamon to 1/2 stick.
2. Add 2 drops red food coloring. |
