Blender Borscht

Ingredients:

  1           32 ounce  ja  borscht
  1             medium  cucumber -- peeled, seeded and
                        -- chopped
  2                     scallions -- chopped
  1                cup  sour cream
                        salt and pepper -- to taste
                        sour cream for garnish
                        fresh dill for garnish -- my added touch
 

Preparation:

Blend one-half of the bottled borscht with the chopped cucumber and onion. Pour into a large bowl. Mix the remaining borscht with the sour cream and fold into the pureed ingredients. Seqason with salt and pepper. Serve cold with a dollop of sour cream sprinkled with fresh dill. May be served hot with sour cream on the side. This is simplistic and absolutely yummy.
