Big Time Sausage and Vegetable Soup WIth Salsa

Ingredients:

  2        tablespoons  olive oil
  2              large  onions -- thinly sliced
  2                     red bell pepper -- seeded and chopped
  2        tablespoons  garlic -- minced
     1/2      teaspoon  fennel seed -- 2
  2             quarts  chicken broth
  4               cups  cabbage -- chopped
  2               cups  salsa
  3                     potatoes -- peeled and diced
  1              pound  Italian Turkey sausage -- casings removed
  2                     zucchini -- sliced
                        salt and pepper -- to taste
 

Preparation:

Heat oil; add onions and peppers and saute for min. Add garlic and fennel;saute for 3 minutes. Add broth, cabbage and salsa. Bring to boil; reduce heat, cover and simmer for 15 min. Add potatoes and continue to simmer until tender. Meanwhile, cook sausages, breaking into tiny bits. Add sausage and zucchini to coup and simmer 8-10 minutes. Season to taste.
