Beef And Barley Soup

Ingredients:

  1              pound  beef shin or soup beef -- cubed
  1         tablespoon  bacon drippings
  1              large  cracked beef or veal knuckle bone
  8               cups  cild water
  1 1/2      teaspoons  salt
  1           teaspoon  freshly ground black pepper
  3                     spprigs parsley
  1             medium  onion -- sliced
  1                     bay leaf
     1/4           cup  brown rice -- and
     1/4           cup  pearl barley
     1/2           cup  chopped celery
  2               cups  stewed tomatoes
  2        tablespoons  chopped parsley
 

Preparation:

1. Day before, saute meat cubes in bacon drippings; until sealed but not browned. Add bone, water, salt, pepper, parsley sprigs, onion and bay leaf. bring to a boil and boil vigorously while skimming the surface of scum.Cover and cook gently 2 hours. 2. Add the barley and rice and cook one hour longer. 3. Cool and chill overnight. next day, remove surface fat, bones, and parsley sprigs. Add the remaining ingredients. Check seasoning and simmer 45 minutes.
