Tilefish With Orange-Grape Sauce

Ingredients:

   2      pounds        tilefish fillets
   2      cups          boiling water
   2      tablespoons   fresh lemon juice
   1      teaspoon      salt
                        ---orange-grape sauce--
   1      tablespoon    cornstarch
   1      tablespoon    sugar
     1/2  cup           orange juice
     1/2  cup           cold water
  11      ounces        canned mandarin orange sections -- drained
   1      cup           seedless grapes
   2      teaspoons     orange rind -- grated
   1      teaspoon      fresh lemon juice
 

Preparation:

1. Cut fish into serving-size pieces; place in well-greased 10-inch skillet. 2. Add boiling water, lemon juice and salt; cover and simmer 8 to 10 minutes, or until fish flakes easily when tested with a fork. 3. Carefully remove fish to warm platter; serve with Orange-Grape Sauce. Orange-Grape Sauce 1. Combine cornstarch and sugar in saucepan; stir in orange juice and water. 2. Cook mixture over low heat, stirring constantly until sauce is thick and smooth. 3. Stir in orange sections, grapes, orange rind and lemon juice; heat.
