Tarragon Baked Cod

Ingredients:

   4      tablespoons   butter -- melted
   4      slices        cod fillets
     1/2  teaspoon      paprika
     1/4  cup           mild onion -- chopped
   1      clove         garlic -- pressed
   3                    tomatoes -- chopped fine
     1/4  teaspoon      tarragon
     1/8  teaspoon      white pepper
     1/4  cup           fresh lemon juice
                        hot cooked rice -- (optional)
 

Preparation:

1. Brush 2 tablespoons melted butter on all sides of cod fillets; arrange in one layer in a baking dish; sprinkle with paprika. 2. Saute onion and garlic in remaining buffer until onion softens; add tomatoes, tarragon, white pepper and lemon juice; stir and simmer several minutes. 3. Pour sauce over fish; bake, uncovered, in preheated 350 F. oven 30 minutes, or until fish flakes easily. 4. Serve with hot cooked rice, if desired.
