Spicy Baked Trout

Ingredients:

  2        tablespoons  butter -- room temperature
     1/2      teaspoon  ground black pepper
     1/2      teaspoon  paprika
     1/4                cayenne pepper
  2        tablespoons  fresh lemon juice
  4                     trout fillets -- (about 6 ounces
                        -- each) with
                        skin
                        lemon wedges
 

Preparation:

Preheat oven to 425 degrees. Mix butter, black pepper, paprika and cayenne pepper in small bowl. Spread mixture over skinless side of each fillet. Sprinkle with salt. Drizzle with lemon juice. Bake fish until just cooked through, about 10 minutes. Serve with lemon wedges. Prep Time: 5 minutes Cook Time: 10 minutes Makes: 4 servings Baking fish is one of the easiest ways to prepare it. Trout is especially good for this technique because the fillets are so thin it takes almost no time at all. The natural accompaniment to this dish is steamed white rice.
