Snapper With Ginger Butter

Ingredients:

  1                     Baby Snapper per person
  1         Tablespoon  minced fresh ginger
  1         Tablespoon  rum
     1/2    Tablespoon  fresh lime juice
  1         Tablespoon  freshly chopped chive  Instructions
                        Season fish with lime -- salt, black pepper,
                        freshly chopped chive, celery,
                        garlic and thyme and set aside.
                        Melt 2 Ounces of butter in a saucepan and
                        add
  1         Tablespoon  minced fresh ginger
  1         Tablespoon  rum
     1/2    Tablespoon  fresh lime juice
  1         Tablespoon  freshly chopped chive
 

Preparation:

Roast fish on a grill until thoroughly cooked. Pour the butter sauce over the fish and serve right away.
