Ingredients:

     2/3           cup  fresh lime juice
  3             quarts  chicken stock
  3               cups  water
  2        tablespoons  lemon zest
  1           teaspoon  lime zest
     1/2           cup  hot chile
  18                    manilla clam
  1              pound  jumbo tiger prawns
  2             pounds  crab
     1/4           cup  scallions
 

Preparation:

combine broth and water in a stockpot combine lemon zest, lime zest, and chiles tie into a piece of cheesecloth and place into stockpot bring broth mixture to a boil, reduce heat, and simmer for 45 minutes remove and discard sachet add clams, shrimp, and crab simmer, over a medium-low flame, for 10-15 minutes, until clams are open and shrimp are pink (discard any clams that do not open) stir in lime juice serve hot
