Savory Chopped Holland Herring

Ingredients:

  2                     holland herring
  2                     hard cooked eggs
  1                     tart apple
  1                     onion
     1/8      teaspoon  pepper
  1              slice  toast
     1/4           cup  vinegar
 

Preparation:

Clean and soak herring in cold water 24 hours, changing water 2 or 3 times. Remove skin and bones. In a chopping bowl, combine herring fillets, eggs, apple, onion and pepper and toast soaked in vinegar and squeeze dry. Chop thooroughly until all ingredients are blended. Add vinegar. Mix thoroughly. Chill 1 hour. Serve with boiled potatoes and sliced tomatoes.
