Parmesan Herbed Flounder

Ingredients:

     1/2  cup           bread crumbs
   3      tablespoons   parmesan
     1/4  teaspoon      garlic powder
   3      tablespoons   fresh parsley -- finely chopped
                        salt & pepper to taste
   2                    eggs
   4                    flounder fillets -- (4-6 oz. each)
   2      tablespoons   vegetable oil
   1                    lemon
 

Preparation:

In a bowl, mix the bread crumbs, parmesan, garlic, parsley, salt and pepper. Beat the eggs in a medium shallow bowl. Dip each fillet in the egg and let the excess drain off. Lay both sides of the fillets in the bread crumb mixture and shake gently to release excess crumbs. Place in skillet on med-hi. Cook until they are lightly browned. Serve warm w/ lemon slices. Approximately 10 minutes.
