Oven Fried Scallops

Ingredients:

  1              pound  scallops
  2        tablespoons  salad oil
  2        tablespoons  lemon juice
     1/2      teaspoon  salt
  1               dash  pepper
  1               dash  paprika
                        fine dry bread crumbs
  1                     egg -- slightly beaten
  2        tablespoons  water
  4        tablespoons  melted butter
 

Preparation:

Combine salad oil and lemon juice in a bowl. Marinate scallops in this for about an hour, stirring occasionally. Drain scallops, then dip in egg mixed with water. Next roll in bread crumbs which have been seasoned with salt, pepper and paprika. Place scallops in a flat baking dish and pour melted butter over them. Bake in a hot 450 degrees oven for about 20 minutes. They should be richly brown and crisp on the outside. Serve with lemon wedges and tartar sauce.
