Preparation:
1. Combine butter with lemon juice, lemon peel, parsley, garlic and shallots; season to taste with pepper and nutmeg.
2. Combine butter-herb mixture in food processor fitted with steel blade; process until well blended.
3. Arrange mussels, in their shell halves, in shallow individual baking dishes; spread each mussel with some butter-herb mixture; run under hot broiler 2 to 3 minutes, watching carefully. If preferred, bake in preheated 425 F. oven 10 minutes, or until bubbly. |
