Mahimahi Kabobs With Fruit

Ingredients:

   2      cups          pineapple chunks in juice -- drained
   3                    bananas -- peeled and cut
                        --- into 2" cubes
   1 1/2  pounds        fish fillets -- (mahimahi)
   2                    limes -- sliced
   2      tablespoons   butter -- (1/2 stick)
   4      tablespoons   light brown sugar
                        oil for greasing grill
                        freshly grated coconut -- (optional)
 

Preparation:

Thread fruit, mahimahi pieces and lime slices alternately on 10-inch skewers. Melt butter with brown sugar in a saucepan. Brush kabobs with sugar-butter mixture and arrange kabobs on prepared grill. cook for 3 minutes, turn, and rotate kabobs every 3 minutes until mahimahi begins to flake when tested with a fork. Arrange on individual plates and sprinkle iwth coconut. Allow guest to remove the fisha nd fruit from skewers.
