Preparation:
1. Saute onion in 4 tablespoons butter for 5 minutes; blend in flour and seasonings.
2. Add milk and cook until thick, stirring constantly.
3. Remove from heat; stir in lemon juice, parsley and crab meat; season to taste with salt. Chill.
4. Shape into croquettes with hands; dip croquettes into egg, then in crumbs.
5. Fry slowly in remaining butter until browned on both sides.
6. Serve piping hot with lemon wedges.
NOTE: Other flaked cooked fish (tuna or salmon) can be substituted for crab. Makes a delicious offering for supper main dish! |
