Crab Stuffed Red Snapper

Ingredients:

     1/2      teaspoon  pepper
     1/4           cup  onion
     1/4           cup  celery
     1/3           cup  butter
     1/2         pound  crabmeat
     1/4         pound  mushroom
     1/2           cup  cracker crumbs
  2                     red snapper fillet
  1           teaspoon  salt
  2          teaspoons  peanut oil
  2          teaspoons  flour
     1/4      teaspoon  white pepper
  1                cup  milk
     1/2           cup  jack cheese
  2          teaspoons  white wine
 

Preparation:

heat 4 tablespoons butter in a skillet, over a moderate flame add onions and celery heat and stir for 5-6 minutes, until tender stir in crabmeat, mushrooms, cracker crumbs, and pepper-mix well remove from heat, set aside sprinkle fillets with 1 teaspoon salt and shake off excess brush baking pan with oil place 1 fillet in pan and spread with crab mixture cover with other fillet and secure with toothpicks brush top with oil bake @ 350 degrees for 35-40 minutes, brushing often with oil heat remaining 2 tablespoons butter in a skillet, over a medium flame whisk in flour, until bubbly stir in milk, salt, and pepper heat and stir until thickened stir in cheese and wine heat and stir until cheese melts remove fillets to a serving platter remove and discard toothpicks ladle sauce over fillets serve hot
