Crab Gazpacho

Ingredients:

  1                cup  sweet red onion
  1         tablespoon  garlic
  4               cups  tomato concasse
  2               cups  cucumber
  3        tablespoons  olive oil
  2        tablespoons  cider vinegar
  1                cup  beef broth
     1/2      teaspoon  salt
  1           teaspoon  freshly ground white pepper
     1/8      teaspoon  cayenne
     1/4      teaspoon  tabasco sauce
     1/4      teaspoon  worcestershire sauce
     1/4         pound  crabmeat
     1/4           cup  scallions
     1/4           cup  celery leaf
 

Preparation:

Combine all ingredients (except crab) in a food processor pulse to a coarse puree cover and chill for 4-96 hours stir in flaked crabmeat spoon into individual glass cups garnish with minced scallions and celery leaves serve chilled
