Classic Oyster Stew

Ingredients:

     1/2  stick         unsalted butter
   4      cups          shucked oysters
   2      cups          heavy cream
   1      cup           half & half
   1      cup           milk
   1      teaspoon      paprika
                        salt & black pepper
     1/4  cup           chopped parsley
 

Preparation:

In large skillet, melt butter. When bubbly, add oysters. Heat a few minutes. Mix together cream, half and half, milk and strained oyster juice in saucepan. Heat thoroughly and add paprika. Add oysters. Simmer. Do not let boil. Season with salt and pepper to taste. Serve hot with fresh parsley. Approximately 8-12 minutes.
