Baked Catfish A La Meuniere

Ingredients:

   6                    catfish fillets -- (4-5oz ea)
   1                    egg
   1      tablespoon    water
     1/2  cup           cracker meal
     1/4  cup           parmesan cheese
   1      tablespoon    lemon and herb seasoning
                        ***MEUNIERE SAUCE***
     3/4  cup           butter or margarine
   2      tablespoons   green onions -- chopped
   3      tablespoons   lemon juice
   1      tablespoon    minced parsley
     1/4  teaspoon      salt
     1/4  teaspoon      white pepper
   1      dash          hot pepper sauce
   1      dash          worcestershire sauce
 

Preparation:

1. Thaw frozen fish according to package directions. 2. Beat egg and water. 3. Combine cracker meal, cheese and seasoning; dip fish fillets in beaten egg, then roll in crumb mixture. 4. Pour Meuniere Sauce in shallow baking dish; place fillets in dish, turning once or twice to coat both sides well. 5. Bake in 350'F. oven 40 minutes, or until fish flakes easily. *** MEUNIERE SAUCE *** Combine all ingredients and simmer 5 minutes.
