Ingredients:

  2             pounds  ground round
  1              pound  italian sausage
  2               cups  shallot
  2        tablespoons  garlic
  4               cups  low sodium beef broth
  1           teaspoon  saffron threads
  3        tablespoons  olive oil
  12            ounces  diced green chiles
  1           teaspoon  oregano
  1           teaspoon  cumin
     1/2      teaspoon  cayenne
  2        tablespoons  hot chile powder
  6             ounces  tomato paste
  32            ounces  canned kidney beans
  4               cups  onion
 

Preparation:

Combine beef, sausage, and garlic in a large stockpot saute for 10-15 minutes, until browned add remaining ingredients, except beans simmer for 60 minutes add kidney beans and simmer for another 30-60 minutes serve hot, garnished as desired
