Ostrich Meatloaf

Ingredients:

  2             Pounds  ground ostrich
  1                     onion -- minced
     1/2                bell pepper -- chopped
  2             Cloves  garlic -- minced (2 to 3)
                        fresh parsley -- chopped
  1                Rib  celery -- chopped
  2             Slices  bread
                        salt and pepper
  1                Cup  tomato sauce -- or catsup, or
                        barbecue sauce
  1         Tablespoon  catsup
  1         Tablespoon  prepared mustard
  1           Teaspoon  brown sugar
 

Preparation:

In food processor with steel chopping blade in place, chop onion, bell pepper, garlic, parsley, celery, and bread. Remove to bowl and add seasonings and sauce. Blend in the meat. Pack lightly into a loaf pan and then combine the remaining 3 ingredients and spread over the top. Bake in preheated 350 degree oven for 40-45 minutes, or until done. Cool slightly before slicing to serve.
