   1      tablespoon    Lemon juice
     1/2  teaspoon      Salt
     1/2  teaspoon      Ground cumin
     1/2  teaspoon      Dried oregano leaves
     1/4  teaspoon      Pepper
   2      Clove         Garlic -- crushed
   1      small         Onion -- chopped-about 1/4 cu
   2      tablespoons   Vegetable oil
   4      pinches       Breads (6-inch diameter)
   2      cups          Shredded lettuce
     1/2  cup           Plain yogurt
   1      tablespoon    Chopped fresh or
   1      teaspoon      Dried mint leaves
   1      teaspoon      Sugar
   1      small         Cucumber -- seeded and
                        (about 3/4 cup)
   1      medium        Tomato -- chopped
     3/4                cup)
 

Preparation:

Mix lamb, water, lemon juice, salt, cumin, oregano, pepper, garlic and onion. Shape into 4 thin patties. Cook patties in oil over medium heat 10 to 12 minutes, turning frequently, until done.Split each bread halfway around edge with knife and separate to form pocket. Place patty in each pocket. Top with lettuce. Mix yogurt, mint and sugar. Stir in cucumber. Spoon onto lettuce and top with tomato.
