Fluffy Light Meat Loaf

Ingredients:

  1              pound  lean ground beef
  1                     tomato paste
     1/2           cup  oatmeal
  3        tablespoons  green bell pepper
  2        tablespoons  bran
  2        tablespoons  wheat germ
  1                     onion
  1         tablespoon  fresh parsley
  1                     egg
     1/4      teaspoon  garlic
     1/2      teaspoon  salt
     1/4      teaspoon  fresh ground black pepper
                        chili sauce
 

Preparation:

Preheat oven to 350 degrees. Combine all loaf ingredients, using your hands.Form into loaf and place in 9 X 5 X 3" loaf pan,cover with layer of chili sauce (or ketchup if desired), bake 50 minutes to 1 hour.(Do not overbake,since part of the secret of fluffiness is shorter cooking time.)Serve the meat loaf sliced and hot. Variation: Half ground veal and half ground beef can be used for the meat loaf - lower in calories.
