Ingredients:

   1 1/2  cups          cottage cheese -- well-drained
   2      tablespoons   dry buttermilk
     1/2  cup           skim milk
   1      tablespoon    lemon juice
     1/2  teaspoon      salt (omit for low sodium diet)
 

Preparation:

Place all ingredients in food processor and process until thick and smooth. Refrigerate until needed.
