flesh of one mango
1 2 cm piece fresh ginger -- peeled and finely
chopped
2 tablespoons runny honey
250 milliliters double cream
Preparation:
Blend all the ingredients, except the cream, until smooth. Whip the cream to a soft peak and fold in 1/3 of the puree.
Layer into long glasses and serve with crisp biscuits.
