Rhubarb and Apple Charlotte

Ingredients:

  1 1/2         pounds  fresh or frozen rhubarb
     1/2         pound  cooking apples
     1/3           cup  brown sugar
     1/4           cup  reduced-fat margarine
  3               cups  fresh whole-wheat bread crumbs
     1/4           cup  unsweetened orange juice
 

Preparation:

Preheat oven to 375ΓΈ. Cut rhubarb into 2-inch pieces. Peel, core and slice apples. 1. Arrange half the rhubarb in the bottom of a 7-cup baking dish. Cover with half the apple slices. Sprinkle with half the sugar and dot with some of the margarine. Cover with half the bread crumbs. Repeat layers, ending with layer bread crumbs. 2. Pour orange over the crumbs. Bake 40 minutes or until fruit is tender and top is browned. Makes 6 servings. Note: Use fresh white bread crumbs in place of whole-wheat crumbs, if you like.
