Raisin-Splice Slices

Ingredients:

  1 1/2           cups  water
     1/2      teaspoon  salt
     1/2           cup  cream of rice
     1/4           cup  raisins
     1/8      teaspoon  cinnamon
     1/8      teaspoon  nutmeg
                        flour
                        vegetable oil
 

Preparation:

Combine water and salt; bring to a boil. Sprinkle in cream of rice and cook, stirring constantly, for 30 seconds. Remove from heat, cover and let stand 3 minutes. Stir in raisins and spices. Pour into a lightly oiled 7 1/2 x 3 1/2 x 2 1/4 inch loaf pan; chill overnight. Unmold and cut into 8 slices. Dust lightly with flour and brown in a skillet with a little vegetable oil. Serve hot with honey or powdered sugar. Makes 4 servings.
