Preparation:
Put apples in large saucepan, add just enough water to halfway cover apples. Cover and simmer 15 minutes or until tender.
Drain and press through a sieve or run on puree in a blender or food processor. Return pureed apples to saucepan and add desired amount of sugar to pan, (taste test to judge amount of sugar needed).
If apples seem to lack tartness add a few teaspoons lemon juice. Cook on low for about 3 minutes, remove from heat, let cool and pack into containers. Keep refrigerated.
