Pickled Orange Slices

Ingredients:

   6      large         oranges
   1      teaspoon      salt
                        whole cloves
   2 1/2  cup           granulated sugar
     1/4  cup           white corn syrup
     1/2  cup           water
   1      cup           vinegar
  12                    coriander seeds -- crushed
                        contents of 2 cardamom seed pods
   1      stick         cinnamon -- (3 inch) broken
 

Preparation:

Grate skin of each orange in 3 or 4 places; drop whole oranges into boiling water; and boil 20 minutes longer, or until tender. Drain and cool. Cut each orange into 4 or 5 crosswise slices about 1/2 inch thick, and stick 2 or 3 whole cloves in each slice. Place in a 3 quart casserole. Combine remaining orange slices; cover casserole; and bake in moderately hot oven of 375 F for 1 to 1-1/2 hours, or until rather transparent. Makes 24-30 amber slices. Serve with meat or fish. Any leftover slices may be stored in refrigerator.
