Basic Candied Ginger

Ingredients:

  1              pound  fresh ginger root
  3               cups  sugar
  3        tablespoons  water
 

Preparation:

place ginger onto an ungreased baking sheet bake @ 140 degrees for 8-10 hours remove from oven, slice thinly combine ginger and water to cover, over a medium flame bring to a boil, reduce heat, and simmer for 30 minutes remove from stove and drain well allow to stand until completely cooled combine ginger, 2-1/2 cups sugar, and 3 tablespoons water in a saucepan, over a low flame heat and stir until ginger is transparent and pan is almost dry remove from heat combine ginger and remaining 1/2 cup sugar-toss to coat evenly store in a sealed glass jar
