Sweet Potato Pound Cake - New Soul Food

Ingredients:

  1                cup  reduced-fat margarine
  1                cup  sugar
  1                cup  brown sugar
  2 1/2           cups  mashed sweet potatoes -- cooked
  1                cup  egg substitute
  2          teaspoons  vanilla
  3               cups  flour
  1           teaspoon  salt
  1           teaspoon  baking soda
  2          teaspoons  butter-flavored extract
  1           teaspoon  nutmeg
  1           teaspoon  cinnamon
 

Preparation:

Heat the oven to 350 degrees. Cream the margarine and sugars in a large bowl until fluffy. Add the sweet potatoes, egg, and vanilla and beat for 2 minutes. Add the remaining ingredients and mix well. Pour the batter into a nonstick loaf pan and bake for 1 hour or until a toothpick inserted in the center comes out clean. 12 servings/Serving size: 1 slice
