Sour Cream Potatoes

Ingredients:

   8      medium        size red potatoes
     1/3  cup           chopped onion
     1/3  cup           butter
   1      cup           shredded Cheddar cheese (4 oz.)
   1      carton        sour cream (16 oz.)
   1      teaspoon      salt
     1/2  teaspoon      pepper
 

Preparation:

Scrub potatoes; cook in boiling water about 30 minutes or until tender. Drain and cool slightly. Peel and cut potatoes into 1/2 inch cubes. Saute onion in butter in a small skillet until tender. Combine potatoes, sauteed onion, and remaining ingredients in a large bowl; mix gently. Spoon potato mixture into a lightly greased 12 x 8 x 2 inch baking dish. Bake at 350 F for 30 minutes or until bubbly.
