Granola

Ingredients:

   4      cups          oatmeal
   1      cup           coconut
     1/4  cup           brown sugar -- packed
     1/4  cup           canola oil
     1/4  cup           honey
   1      teaspoon      cinnamon
   1 1/2  teaspoons     vanilla
   1      cup           raisins -- optional
 

Preparation:

In a large bowl, combine oats and coconut and set aside. In a saucepan, combine brown sugar, oil, honey, and cinnamon. Bring to a boil. Remove from heat and stir in vanilla. Pour over oat mixture, stir to coat. Spread in a large shallow pan. (I use a cookie sheet with sides, lined with foil) Bake at 350 for 15 - 20 minutes, stirring occasionaly. Cool. Add raisins. Granola gets crunchy when it cools. You may add dehydratred fruit, nuts, raisins, chocolate chips..whatever your heart desires. Use this recipe as is for the granola bars. For just plain granola double the amounts of honey, brown sugar and oil.
