Easy Fruit Bars

Ingredients:

  4 1/2           cups  basic fruit bar mix
  1                     egg* -- slightly beaten
  1           teaspoon  vanilla extract
  1 1/2      teaspoons  all purposed baking spice or
  1           teaspoon  ground cinnamon and
     1/2      teaspoon  ground nutmeg
 

Preparation:

*Use 2 eggs, slightly beaten, if you have added 1 cup of rolled oats to your basic fruit mix. Combine all ingredients with a fork. Spread approximately half the fruit bar mixture in a greased 8x8 inch pan. (Use a greased 9x9 Inch pan if you have added 1 cup of rolled oats to your mix.) Press with a spatula or back of spoon to make a thin layer over entire bottom of baking pan. Sprinkle on 1 cup of your choice of fruits, nuts or chocolate, or any combination thereof (see below). Using a fork and your fingers, top with the remaining crumb mixture (it will spread to cover during baking) . Bake in a preheated 350 oven for 30 minutes. Cool and cut into squares. Makes up to 24 bars. FILLINGS: Use a total of 1 cup of the following ingredients for each batch of bars: Raisins, chopped dates, figs, prunes, shredded or flaked coconut, dried apricots or apples, well-drained crushed pineapple, walnuts, almonds, pecans, unsalted peanuts (coarsely chopped}, chocolate, peanut butter, or butterscotch chips.
