Applesauce Raisin Bars - Southern-Style

Ingredients:

  1                cup  water
  1                cup  raisins
  1                cup  unsweetened applesauce
  2                     eggs
     1/3           cup  pure maple syrup
     1/2           cup  canola oil
  1           teaspoon  vanilla
  1           teaspoon  baking soda
  2               cups  flour -- part or all
                        -- whole-wheat
  1 1/4      teaspoons  cinnamon
     1/2      teaspoon  nutmeg
 

Preparation:

Preheat the oven to 350 degrees. Cook the raisins in water until they are soft. Drain off water. In a medium bowl, combine the raisins, applesauce, eggs, syrup, oil, and vanilla. Combine the remaining ingredients and add to the medium bowl. Mix well. Bake in a nonstick 9 x 12-inch pan for 30 minutes. Cool 10 to 15 minutes before serving.
