  1              pound  mushroom stems and pieces
     1/4           cup  shallot
  1                cup  champagne
  1                     bay leaf
  6             quarts  heavy cream
     1/4      teaspoon  kosher salt
     1/4      teaspoon  freshly ground white pepper
 

Preparation:

smoke mushroom stems @ 110-140 degrees for 40 minutes combine smoked mushroom, shallots, champagne, and bay leaf in a saucepot, over a moderate flame heat to a boil, reduce heat slightly, and reduce by three-fourths add cream and reduce by one-third season to taste with kosher salt and white pepper serve hot
