Ingredients:

  1                cup  onion
  3               cups  roma tomato
     1/2      teaspoon  ground basil
     1/2      teaspoon  flat-leaf parsley
  1           teaspoon  diced pimiento
  1           teaspoon  olive oil
  1           teaspoon  wine vinegar
  1           teaspoon  sugar
     1/2      teaspoon  kosher salt
     1/4      teaspoon  ground cumin
     1/4      teaspoon  white pepper
  1                cup  beef stock
 

Preparation:

combine onions, tomatoes, basil, parsley, and pimientos in a food processor process to a smooth puree heat oil in a large saucepan, over a medium flame add tomato mixture, vinegar, sugar, salt, cumin, and pepper-mix well bring to a boil, reduce heat, skim, and simmer for 8-10 minutes, adding broth as needed skim well remove from heat cover and chill for 1-48 hours or freeze to store use as desired
