Mama D's Favorite Pasta Sauce

Ingredients:

   2      tablespoons   olive oil
   2      pounds        pork spareribs -- cut into
   1      medium        onion -- minced
   2      cloves        garlic -- minced
  28      ounces        plum tomatoes -- canned
   6      ounces        tomato paste -- canned
   6      ounces        water -- use tomato paste
                        -- can
                        salt and pepper
   1      teaspoon      garlic -- minced
   5 1/2  teaspoons     fennel seeds
 

Preparation:

Heat oil in 5 qt casserole over med high heat. Brown spareribs. Add onion and 2 cloves minced garlic. Saute until onion is transparent. Add tomatoes, crushing as you add them and the liquid from the can. Add tomato paste and water. Raise heat and add remaining ingredients. Bring to a boil, stirring to mix. Reduce heat and simmer, uncovered until meat starts to fall away from the bone, about 2 hours. Stir often to keep sauce from sticking to the bottom of the pan.
