Preparation:
Cook noodles in boiling, salted water following package directions; drain
Preheat oven to 350 degrees.
Melt butter in small frying pan. Add onion and saute until translucent. Transfer onion to mixing bowl and add noodles, spinach, eggs, yogurt, salt, pepper and nutmeg; mix well.
Place mixture into greased, 6 cup ring mold. Place mold in pan with 1 inch hot water, then bake for 45 minutes. Remove from oven and loosen edges of mold with spatula. Unmold onto serving platter, and serve immediately. |
