Emeril's Lemon Butter Sauce

Serves: 2 cups
 

Ingredients:

     1/4           cup  chopped shallots
  6        tablespoons  fresh lemon juice
                        salt
                        freshly ground white pepper
  1           teaspoon  chopped garlic
     1/2           cup  dry white wine
     1/4           cup  heavy cream
  1 1/2         sticks  butter -- cut into 1/2-inch
                        -- chips
 

Preparation:

1. In a saucepan, over medium heat, combine the shallots, lemon juice, salt, pepper, garlic, and wine. Bring the liquid to a boil. Reduce the heat to medium and simmer for about 6 minutes or until the liquid reduces by half. 2. Add the cream and continue to simmer for 4 minutes. Whisk butter, one chip at a time. Remove from the heat and serve.
