     1/2           Cup  Milk
     1/2           Cup  Water
  1                     Egg -- Beaten
  1                Cup  Flour
  1              Pinch  Salt
     1/2           Cup  Butter -- Melted
                        Sour Cream
                        **Cheese Filling**
  1              Pound  Dry Cottage Cheese
  2        Tablespoons  Sour Cream
  2                     Eggs -- Lightly Beaten
  2        Tablespoons  Flour
  2        Tablespoons  Lemon Peel -- Grated
                        Salt
     1/2           Cup  Golden Raisins -- Optional
  4        Tablespoons  Slivered Almonds -- Optional
                        Sugar -- To Taste
                        Cinnamon-Sugar -- To Taste
 

Preparation:

FOR PANCAKES: Combine milk, water and egg. Add flour and salt and mix thoroughly. Heat a lightly greased 7" or 8" skillet. Pour in 2 tablespoons butter. Rotate skillet rapidly to cover surface of pan with a thin layer of batter. When golden on one side, turn and brown other slide lightly. Transfer pancakes to hot platter, cover and keep warm. Fill with cheese filling. Rose and brown each quickly on both sides in hot melted butter. Serve with sour cream. The batter and filling should make about 10 nalesniki. CHEESE FILLING: Stir cheese with fork till fluffy. Add sour cream, eggs, flour, lemon peel and salt to taste. If filling is to be used for main dish, omit remaining ingredients. For dessert, add raisins and almonds and sweeten to taste. Fill the pancakes with this mixture. Serve main dish cheese nalesniki with sour cream. Sprinkle dessert variation with cinnamon and sugar.
