Ingredients:

     1/2       package  penne -- (16 ounce)
  1              pound  fresh spinach leaves -- cut into 2-inch
  1         tablespoon  extra vergin
                        olive oil
     1/2      teaspoon  minced garlic
     1/4      teaspoon  crushed red pepper flakes or hot pepper -- optional
                        sauce
  1                can  italian style crushed tomatoes -- (28 ounce)
  2          teaspoons  dry basil
  2        tablespoons  low-fat or fat free cream cheese
                        grated parmesan cheese -- for serving
                        cheese
 

Preparation:

Cook pasta according to package directions. Add spinach the last two minutes of cooking. Drain. Meanwhile, heat olive oil in a large saucepan over medium-high heat. Stir in garlic and pepper flakes, if using and cook for 1 minute. Stir in crushed tomatoes, basil and cream cheese. Bring to a boil, stirring briskly, until cheese melts. Return pasta to pot or place in bowl. Add sauce and toss. Serve with Parmesan cheese. Prep Time: 7 minutes Cook Time: 8 to 10 minutes Makes: 4 servings
