Ingredients:

  5                 Oz  self-raising flour
  1                 Oz  demerara sugar
  2                 Oz  shortening
  1             Medium  egg yolk
                        enough milk -- to mix
  5               Tbsp  strawberry jam
  1                 Pint  hot fresh custard -- to serve
 

Preparation:

Preheat oven to 200°C (400°F) and put a roasting tin half-filled with water on the bottom shelf. Stir together the flour, sugar and shortening. Add the egg yolk and enough milk to make a soft but not sticky dough. Roll out the mixture on a lightly floured surface to make a 9in square. Spread the jam to within 1/2in of the edges of the pasrtry. Roll up the pastry and wrap it first in greaseproof paper, then in foil. Place on a baking sheet and cook in the middle of the oven (above the roasting tin with water) for about 40 mins. Serve three thin slices of roly-poly per portion with custard.
