Eggplant and Feta Ziti

Ingredients:

  1              pound  ground beef
  1             medium  eggplant peeled cut into 1/2-inch cubes -- (about 6 cups)
     1/2           cup  chopped onion
  1              clove  garlic -- minced
  32            ounces  spaghetti sauce
     1/4      teaspoon  ground cinnamon
  8             ounces  feta cheese with garlic & herb -- crumbled
  2               cups  shredded part-skim mozzarella cheese -- (8 ounces)
  2               cups  ziti -- cooked & drained
 

Preparation:

BROWN meat in large skillet; drain. Remove and set aside. Cook eggplant, onion and garlic on medium heat 10 minutes or until vegetables are tender, stirring occasionally. Stir in spaghetti sauce, cinnamon and reserved meat. Reduce heat to low; simmer 5 minutes. Mix feta and mozzarella cheese. LAYER ziti, meat sauce and cheese mixture in greased 1 3x9-inch baking dish. BAKE at 3750F for 25 to 30 minutes or until thoroughly heated and lightly browned. Let stand 10 minutes before serving. Makes 8 to 10 servings Prep Time: 35 minutes Baking Time: 30 minutes plus standing Note; I could not find the flavored Feta so I crumbled the cheese and sprinkled it with a healthy couple shakes of garlic powder and just a bit of finely crushed herbs (oregano, summer savory and rosemary).
