Tangy Pork Chops

Ingredients:

   4                    pork chops -- ( i recommend at
                        -- least 6), (4 to 8)
     1/2  teaspoon      salt -- (optional)
     1/8  teaspoon      pepper
   2      medium        onions -- chopped
   2                    celery ribs -- chopped
   1                    green pepper -- choped
   1      can           stewed tomatoes -- (14 oz.)
     1/2  cup           ketchup
   2      tablespoons   cider vinegar
   2      tablespoons   brown sugar
   2      tablespoons   worcestershire sauce
   1      tablespoon    lemon juice
   1                    beef bouillon cube
   2      tablespoons   cornstarch
   2      tablespoons   water
 

Preparation:

Place chops in slow cooker, sprinkle with salt if desired add the onions, celery, green pepper and tomatoes (I just sliced all the veggies in my food processor). Combine ketchup, vinegar, sugar, Worcestershire sauce, lemon juice, and bouillon. Pour over Veggies. Cover and cook on low for 4-5 hours. Mix cornstarch and water until smooth, add to slow cooker. Put on high and cook for 30 minutes more or until thickened. Can be served over rice or with Mashed Potatoes, lots of sauce for gravy. This has moved into first place on my list of Pork Chop Recipes.
