Sweet 'n' Sour Chops

Ingredients:

   4      medium        pork chops
  40      grams         dripping or cooking fat
   3                    carrots (peeled and sliced)
 430      milliliter    beef stock (e.g: 1 Lemco beef cube disolve
   1 1/2  Tablespoon    corn flour
   2      Teaspoon      soy sauce
                        salt and pepper
   2      Tablespoon    demerara sugar
 350      grams         pineapple cubes (drained)
 225      grams         patna or long grain rice (boiled)
                        parsley (to garnish)
 

Preparation:

1. Wipe chops and brown in dripping with carrots. Save juices. 2. Remove to a casserole dish and pour on beef stock. Cover and bake in a moderately hot oven .TE (375 (190 ) for 1 hour. 3. Blend cornflour with soy sauce, add juices from chops. Bring to a boil in a small pan, stirring constantly. Season and pour over chops. 4. Add demerara sugar and pineapple cubes, and return to oven for a further 15 mins. 5. Serve with boiled rice and garnish with parsley. Difficulty : easy.
